Zaytoun’s Maftoul giant couscous. It is a special sort of couscous that has a nuttier and firmer texture than most grains whilst still being hearty and light. Brilliant in summer salads. To use rinse grains in cold water then steam for 20 minutes or add 350ml of stock/water bring to the boil and simmer for 12-15 minutes.
